A solid bar of chocolate often crumbles and scatters across the kitchen instead of slicing cleanly — a problem nearly every home baker has faced. According to professional pastry chefs, the real culprit is the wrong knife and technique, not the chocolate itself.

The size of the chocolate pieces affects the final result far more than most people realize. Finely chopped chocolate melts more evenly, blends into batter more smoothly, and gives baked goods a nicer texture than large, uneven chunks. That's why pastry chefs pay just as much attention to how they cut chocolate as to which chocolate they choose.

The key tool is a good-quality kitchen knife with a long blade. Short knives or serrated blades, experts say, tend to break and shatter chocolate rather than slice it cleanly. A sturdy blade can handle even hard chocolate, and when cutting a large amount, it helps to use a wide blade — you can brace it with your other hand while rocking it back and forth, which spreads the pressure evenly and keeps the knife from slipping.

Professionals recommend working on a stable cutting board, holding the knife perpendicular to the bar: place the bar on the board, anchor the tip of the knife on the board with one hand, and rock the handle up and down with the other.

Temperature is another key factor. Chocolate that's too cold, straight from the fridge, tends to crumble more when cut, while chocolate that's too warm softens and sticks to the blade. Experts recommend keeping chocolate at room temperature, ideally around 18–20°C — that way it stays firm and cuts cleanly.

The size of the pieces should match the recipe. Finely chopped chocolate melts quickly in cookie dough, brownie batter, or muffin mix. Medium-sized pieces work well in cakes and holiday breads, creating pleasant little surprises in every slice. Larger chunks are best saved for decorating cakes, layered desserts in glasses, or homemade ice cream, where they add a bold, satisfying texture.

Among the most common mistakes: breaking the bar apart by hand first and then trying to even out the pieces with a knife, which results in a messy mix of different sizes. Another frequent error is pressing down too hard on the knife — a smooth, gliding forward-and-down motion works far better than forceful chopping. Moisture is also worth watching closely: chocolate absorbs water easily, which can turn it lumpy and grainy when melted later, so make sure both the board and the knife are completely dry.
