Prague restaurateurs Dominik Patga and Zbyněk Dusil, together with their partners Eva and Kateřina, already well known for their successful venues Laskava and Grøn in Vinohrady, have opened a new project — the bistro Dabl. on Rybná Street, right in the heart of touristy central Prague, just a couple of minutes’ walk from the Kotva department store.
They admit the new spot wasn’t planned in advance — the idea came about spontaneously, after the team was offered a space not far from Old Town. “We felt we had the experience and the team for a new project, but there was no real need to open one just for the sake of it. Then this space on Rybná came up, and it grabbed us so much that we started thinking about what could work here,” says Patga.
Dabl. positions itself as an urban bistro with a touch of edge and “rawness” — muted pastel tones, an industrial interior with exposed brickwork, and a spacious courtyard set it apart from the typically touristy spots selling trdelník nearby. The menu features signature breakfasts and brunches: eggs with guanciale, chicken and kimchi sandwiches, salmon with black rice, sweet potato with hummus and Gran Moravia cheese, plus desserts such as tiramisu French toast and sourdough flatbreads with pistachios.
The founders stress that they had no intention of cloning their existing concepts. “Honestly, we find it far more interesting to create something new than to copy what already works. Of course, it would be easier to take Grøn or Laskava and open a second branch — we already have the brand, the menu, the visual style and the customers. But that’s exactly what doesn’t interest us,” Patga explains.
The venue is currently operating in soft-launch mode, having opened in mid-August. The team’s plans include gradually extending the format into the evening with tapas and wine service, as well as finishing the cozy courtyard, which, according to the entrepreneur, was one of the main reasons for choosing this location.
