Just don't overdo the acid, or the meat's texture can turn mushy. A tried-and-tested combination is oil, garlic, sweet paprika, crushed cumin, and mustard, while sliced onions add that extra aroma reminiscent of a proper steak.

Patience is essential here: the meat should marinate for at least three hours, though ideally between 12 and 24 hours in the fridge. Simply place the pieces in a sealed container, coat them thoroughly on all sides, and turn them occasionally. If you're preparing a whole neck cut, it can even marinate for several days. As for salt, it's best added right before grilling — or even once the meat is already on the plate — so it doesn't draw out excess moisture beforehand.

Here's a crucial step that's often overlooked: take the meat out of the fridge in advance — about an hour before cooking — so it has time to reach room temperature. A cold cut placed on a hot grill cooks unevenly and takes longer to heat through in the center. Before grilling, let any excess marinade drip off so the oil doesn't fall into the flames and cause flare-ups. For extra insurance, rub the grates with a piece of fat to keep the meat from sticking.

The ideal grill temperature for pork neck is 200–250°C, and it's worth preheating the coals or grates about thirty minutes ahead of time to ensure a steady, even heat. The pieces themselves should grill for roughly 5–7 minutes per side — the exact time depends on the thickness of the cut and how powerful your grill is. Too low a heat will dry the meat out, while too high a heat will char the surface while leaving the center raw.

Experts recommend turning the meat only with tongs, never a fork — piercing it disrupts the structure and lets all the juices escape. Once off the grill, let the steaks rest for a couple of minutes away from the heat — this allows the juices to redistribute evenly, making the meat especially tender.

Pork neck pairs best with something bright and vibrant: grilled vegetables, a fresh leafy salad, or a classic cucumber salad that balances out the richness of the meat. Good side options include a crusty baguette, baked potatoes, or corn on the cob, and sauce lovers should try a homemade BBQ or mustard dip — just don't go overboard, so it doesn't drown out the flavor of the meat itself.
